Gingerbread Caramel Corn



A delightful holiday treat, Gingerbread Caramel Corn combines the sweet crunch of caramel corn with the warm, comforting flavors of gingerbread. It's ideal for fun get-togethers and warm evenings by the fireplace.

Ingredients:

  • 1/2 cup popcorn kernels
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup molasses
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions:

Set oven temperature to 250F 120C

Use your favorite method to pop the popcorn kernels and reserve them in a big bowl

Melt butter in a saucepan over a medium heat

Add salt, ginger, cinnamon, nutmeg, brown sugar, and molasses

Stirring constantly, bring the mixture to a boil and then leave it there for four minutes without stirring

After turning off the heat, stir in the baking soda until the mixture foams

After adding caramel mixture to popcorn, toss to coat evenly

Arrange the coated popcorn on a parchment paper-lined baking sheet

Bake for 45 minutes in a preheated oven, stirring every 15 minutes to make sure the coating is uniform

Take out of the oven and allow to cool down fully

Any big clumps should be broken up and stored in an airtight container

Seared Tuna Tostadas

Ingredients:

  • 4 oz sushi-grade tuna
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 avocado, diced
  • 1/4 cup diced cucumber
  • 1/4 cup diced mango
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 8 tostada shells
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

Put honey, soy sauce, lime juice, and sesame oil in a bowl

This is the marinade

Cut the tuna into thin strips and dip them in the sauce

For 15 minutes, let it sit

Place the pan on high heat

Now add the tuna that has been marinated

Sear it for 30 seconds on each side

Take it off the heat and let it cool down a bit

In a different bowl, mix the mango, red onion, avocado, and cilantro that have been diced

Add pepper and salt to taste

Put some of the avocado mixture on top of each tostada shell

Tear the tuna into thin slices and put them on top of the avocado mix

Add sesame seeds as a garnish

Serve right away and enjoy!

Hungarian Beef Goulash

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar

Instructions:

With the whisk running all the time, slowly pour a small amount of the hot cream mixture into the bowl with the egg yolks to temper them

While whisking constantly, pour the tempered egg mixture back into the saucepan with the rest of the cream mixture

Stir the mixture all the time over medium-low heat for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon

Do not let it get too hot

Take the pan off the heat and use a fine-mesh sieve to strain the mixture into a clean bowl

This will get rid of any solids

Cover the bowl with plastic wrap and press it right on top of the custard to keep a skin from forming

Put the custard in the fridge for at least four hours or overnight, until it is very cold

Once the custard is cold, use an ice cream maker and follow the directions on the box until it's the consistency of soft serve

Cover the churned ice cream and put it in a container that can go in the freezer

Freeze for at least 4 hours, or until it is firm

If you want, you can serve the pickled ginger ice cream with extra lime zest or a sprig of fresh lavender on top

Ingredients:

  • 1 box manicotti shells
  • 2 cups ricotta cheese

  • 1/4 cup lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • 1/4 cup grated Parmesan cheese for topping

Instructions:

Warm the oven up to 175F 350C

Follow the directions on the package to cook the manicotti shells

Remove the water and set it aside

Put ricotta cheese, mozzarella cheese, grated Parmesan cheese, chopped parsley, lemon zest, lemon juice, garlic powder, salt, and black pepper in a large bowl

In the bottom of a baking dish, spread out 1 cup of marinara sauce

Fill cooked manicotti shells with the cheese mix, then put them in a baking dish

Cover the stuffed manicotti with the rest of the marinara sauce

Add grated Parmesan cheese on top

Place foil over the top and bake for 25 to 30 minutes, or until hot all the way through

Take off the foil and bake for another 5 to 10 minutes, until the cheese is bubbly and starting to turn golden

Before serving, sprinkle with fresh parsley
